Satisfy Your Sweet Tooth the Paleo Way: Try Justin’s Paleo Chocolate Chip Cookies!

As a fitness business owner, instructor, wellness seeker, and foodie, I’m always on the hunt for recipes that taste amazing and align with my lifestyle. And today? I’m sharing one of my all-time favorites: Justin’s Paleo Chocolate Chip Cookies.

If you follow me on social, you’ve probably seen my stories featuring Justin’s famous cookies. (They’re legendary in our house!) Over time, he’s perfected the recipe, and now we make them regularly. They’re high in fiber, totally delicious, and in my opinion—completely guilt-free.

As a thank you for voting for me in the Times Union Best of 2024 Contest, I wanted to share something special in return. So here it is—straight from our kitchen to yours!

What is a Paleo Lifestyle (and Why I Love It)

While some might call paleo a “diet,” I personally don’t love that term. “Diet” often implies restriction or calorie-cutting, and that’s not my vibe. Instead, I see paleo as a wholesome, sustainable way of eating that fuels and nourishes the body.

The paleo approach focuses on foods our ancestors may have eaten during the Paleolithic era—think lean proteins, fruits, vegetables, nuts, and seeds, while avoiding processed foods.

Benefits of paleo eating include:

  • Higher energy

  • Better digestion

  • More stable blood sugar

  • Fewer processed ingredients

  • Real, satisfying food

My Real-Life Approach to Paleo

I don’t follow any diet strictly. I live by the 80/20 rule—about 80% of the time, I fuel up with clean, nutrient-dense foods. The other 20%? I make room for flexibility and joy (because food is also meant to be fun and satisfying!).

Why These Cookies Work for Paleo Lifestyles

Now, let’s get into the cookies and why they check all the paleo-friendly boxes:

🍪 Almond Flour + Coconut Flour
These nutrient-rich flours are grain-free and packed with fiber and healthy fats.

🥚 Egg
A clean source of protein and structure in paleo baking.

🥥 Coconut Oil or Beef Tallow
Choose your preferred fat—both are paleo-approved and full of healthy fats.

🍯 Coconut Sugar
A lower-glycemic, minimally processed sweetener that adds just the right amount of sweetness.

🌿 Vanilla Extract
Adds flavor depth while keeping things clean.

🍫 Dark Chocolate Chips
Go for 72% cacao or higher to keep the sugar low and benefits high.

🧂 Maldon or Sea Salt
A pinch of flaky or cracked sea salt brings out all the flavors.

Pro Tip: Add extra chocolate chips and a sprinkle of salt on top before baking. You won’t regret it.

Final Thoughts from My Kitchen to Yours

It's all about discovering what works for your body and embracing food that nourishes both your health and your happiness.

So go ahead… make a batch of Justin’s Paleo Chocolate Chip Cookies, pour a glass of almond milk, and like my mom always says:

“Don’t forget the most important ingredient… LOVE.”

Wishing you health, happiness, and lots of delicious, feel-good moments in the kitchen.

With love,
Britt
